Dating back to the roots of France. Prior to moving to Edmonton, Franck Bouilhol longed to make gelato and sorbet during his time in France - where he was born - as a pastry chef. He wanted to create a community that loved to indulge and enjoy themselves but wanted to make sure the taste was up to par. Franck decided to pursue his dreams once he arrived in Edmonton and created Little Bear Gelato. His inspiration was to, “bring a little bit of a French twist to this community.” He works hard to make sure the gelato and sorbet are filled with more flavour than the usual gelatos - meaning lots of what you want and less of what you don’t want. Franck saw an opportunity to thrive within the gelato community and took it. However, the name of Little Bear Gelato didn’t come until later on, when he decided to call the company after his eldest son's nickname, “Little Bear.”
